VINEYARDS

Located in 25 de Mayo – San Rafael at 850 mts. on a hill. The Pinot Noir parcel is characterized by deep and poor soils of sand and clay with parts of caliche. Yields of 10.000 – 12.000 kgs. per hectare. French rooted vines planted in 2003, conducted on a vsp and irrigated by drip irrigation.

WINEMARKING

We lower the cluster temperature to 8°C to destem and press them in the pneumatic press where the must stays in contact with the skins for a couple of hours extracting part or its color and aromas. Fermentation takes place in stainless steel tanks at temperatures under 16°C for 20 days. Cold stabilization and filtration prior to being bottled with the addition of tirage liqueur to perform second fermentation in the bottle at controlled temperature of less than 18°C.

TASTING NOTES

Delicate salmon like color. Its aromas present notes of strawberries and raspberries that blend with toasted bread and honey notes. The mouthfeel is characterized by its small bubbles which add little tension to the palate, leading to a very fresh and expressive aftertaste that highlights the complex  aromatic perception of the wine.
