We lower the cluster temperature to 8°C to destem and press them in the pneumatic press where the must stays in contact with the skins for a couple of hours extracting part or its color and aromas. Fermentation takes place in stainless steel tanks at temperatures under 16°C for 20 days. Cold stabilization and filtration prior to being bottled with the addition of tirage liqueur to perform second fermentation in the bottle at controlled temperature of less than 18°C.
